7 Ways to Use Pomegranate Molasses

What can you do with pomegranate molasses?

 

We often buy ingredients for a specific recipe and they sit, unused and unloved, in our cupboards until they expire and end up in the bin.

 

My suspicion is that pomegranate molasses might be up there in that category, so here are a few things to do with yours.

 

The lovely sour/sweet tang is a perfect addition to so many dishes, both savoury and sweet, so give these a go!

 

Salad dressings

I love to add pomegranate molasses to salads for a lovely tart sweetness. I’ll usually add it to dressings when the salad is quite crunchy, and it’s also lovely over tomatoes.

There’s no right or wrong way to make this, but always add conservatively as with most things, as you can always add more but taking it away is harder.

Dressing: Extra virgin olive oil, pomegranate molasses, sea salt.

You could also add vinegar, crushed garlic and/or herbs, sumac or other spices.

 

As a marinade

I love pomegranate molasses as a marinade for chicken, and you can also use it with fish, beef, duck or as a glaze for pork.

 

To flavour grains

Turkish Kisir is made from cooked bulgur wheat with tasty things stirred through. I use tomato paste, pomegranate molasses, olive oil, salt and pepper, chopped spring onion, chopped mint and parsley and lemon juice.

The idea stands for any grain or lentils and other pulses – stir through some delicious flavours and you have a great dish.

 

Dips

I love making baba ganoush by roasting whole aubergines which have been pierced a few times in the oven or over a barbecue until collapsed and charred. Then I scoop out the flesh and chop it roughly before mixing it with pomegranate molasses, olive oil and sea salt, and perhaps some crushed garlic, chopped herbs and/or tahini.

 

Pomegranate molasses are also found in muhammara, a delicious dip made from roasted peppers and walnuts.

 

Roasted vegetables

Toss carrots in olive oil, pomegranate molasses and salt before roasting them. Other vegetables would be equally lovely.

 

Desserts

Drizzle pomegranate molasses over Greek yoghurt or ice cream, a pavlova or cheesecake, or over cakes to balance the sweetness.

 

Drink

You can use pomegranate molasses as you would a cordial depending on how viscous it is (brands differ in consistency). It’s lovely stirred through sparkling water, or try with bubbles or a G+T.
